I'm with you, Fr. A true Roman Chasuble is very nice.
So many so-called fiddlebacks look like bibs. Some that I've seen are so short they honestly look a bit silly.
Shame this style isn't more prevalent. The overly truncated fiddleback has poisoned this style. Guilt by association.
