I came across the video below by a real Napalatanacho who is a great cook (he's from Naples, like me!). He shows how to make this ancient Napalatano dish and it is so easy and delicious!
Uove in purgatorio (Eggs in Purgatory!)
all you need is a half of cup or less of canned tomatoe sauce
--2 tablespoons or less of Olive Oil EVO
--two eggs
--Cheese (Caciocavallo) I couldn't get this brand, but it is described as mozzarella on steroids. I used a different cheese that had a kick with a bit of shredded mozzarella.
Place the oil in pan, heat, then add the tomato sauce and bring to slight boil or simmer. Add salt and pepper to taste stir, then add two eggs. Then place the cheese on top of the egg yokes completely covering them. Place lid on pan, cook for no more than one minute.
The yoke should be runny but the white part cooked.
Plate and use a good Italian bread to consume. It might be in purgatory but it tastes like heaven. I think you could eat this for breakfast, lunch or supper or just a nice snack. And so quick too and it tastes like Napoli my hometown!
