AN ANCIENT NEAPOLITAN POOR MAN’S DISH, EGGS IN PURGATORY, BUT DON’T SERVE IT TO PROTESTANTS BECAUSE THEY BELIEVE IN IT!


A very simple recipe, olive oil, garlic cloves, can tomato sauce, cup of water, eggs,  basil, parmigiana and salt and pepper. I added chicken and spaghetti, but should be served as is with good crusty Italian bread.  Eggs should be runny and bread dipped into mixture once it cools a bit. Purgatory is delicious!

Sorry father, but I find eggs to be the most disgusting "food" in existence. I can't even sit at the same table with people who are eating them. Ugh!

I have seen this recipe several times and have always wanted to try it. It looks delicious. I am curious , do you ever add chili or other hot peppers to turn it to Fra diavolo ?

I don't make this often, but I like hot spicy 🌶 food and I think it would work.

I love eggs in purgatory! I make a similar, maybe related, dish called shakshukka. I have not put it on pasta, but I bet that is good.

The several recipes I've seen say to add some red pepper flakes or ground red pepper to spice up the sauce. Thus, the "purgatory".
