This works well with white fish like Mahi Mahi, Flounder, etc. 1/2 cup of balsamic vinegar, 1/4 cup olive oil, 2 tsp. basil, 1/4 tsp salt. Wisk it up really well. Coat bottom of baking dish with thin coat of mix. Put fish in baking dish and pour the rest over it. Marinate 15-30 min. Pour off excess marinade. Bake 350 for 20-25minutes or until fish flakes. I use filets for this recipe. It was originally for grilling fish, but I decided to bake it. I've never tried it with salmon...I think it would kill the unique taste of the salmon too much.
Or...you can eat that nasty stuff Fr. posts all the time if you are feeling particularly penitential.
